thermal onesie, sweater you can swap in and out of, insulated bib overalls. pro strat would be wool onesie and polar fleece sweater for airflow and moisture control.
shell jacket for when it's wet.

maybe get two coveralls and rotate.
wool can be hung up to air out between wears.

coveralls are restricting though so find one with an action/bi-siwng back and wear a belt.
