Can't you just remove it from auto start? Either way if you aren't gonna use it to begin with. Might as well just uninstall it.

It's just a single button to disable it. It's not hard.

Don't get me wrong Gnome Software is absolute garbage, but that has more to do it being a slow dysfunctional bloated mess than any of the reasons you gave.
