All I ever want is one playable character, but that character should be customizeable with backgrounds and job combos.

I don't like managing a party full of pre-defined puppets.

If you want a game to feel more lifelike, lifelike party members should be job #1.
If you want it to feel less like an RPG and more like an on rails action game, locking down the main character with predefined everything is how you do it.

Full customization like Dragon's Dogma is fun, but it gets a little tedious managing that many soulless blobs.
A hybrid like Pathfinder is ok, but feels locked down if you build the characters counter to their background, and they are lifeless with only the most rudimentary of AIs.

FF12 still did it the best to date on party AI, minus the customizeable MC thing, and if your MC is going to be as bland as Vaan anyway why bother giving him a pre defined background? It's an argument that made sense a while ago due to resource/dev time/dev tool primitiveness scarcity, but we're long past that.

BG3 did it the overall best to date, minus any party AI.

I'd rather be frustrated at something stupid a party member did as part of their personality and use MC tactics to make up for it than just perfectly control everything. It even can make for a more interesting tactical game with more random elements introduced that way.
