I find it easier to prep a bunch for lunches for a few days - I can bang out a dozen in about 30 minutes (not including cooking the rice), and once formed, I leave them in a covered baking dish in the fridge - when I want to eat them I grab a nori sheet fresh out of the package to wrap them with because I like it dry and crispy. I'm also a bigtime casual - I form them with a mold like picrel and they come out perfectly, whereas my rolls are pretty mixed and my onigiri tend to look like a misshapen lump when made by hand. So it's a combo of time efficiency and a more consistent result

It's rough, right? I did the same in my early 20s when I was still in the meat grinder level of wagie and it just wasn't doable, especially refusing to live with roommates or living excessively lean. I live in Canada (don't recommend) and the max welfare you can get for full disability is just under $1000 USD a month. Wouldn't even cover rent in a crack shack nowadays
