It sounds like a shift in ingredient quality from a limited time offer product with few preservatives, prime quality chicken & breading, to a normal menu item where shelf stability and raw numbers are more important for them
likely they switched from a premium chicken source to a shittier, cheaper one and changed the breading to something with tons of preservatives in it once the scale of production went sky high
