American mexican and asian is throughout the entire state except maybe the most northen boonies. There's this idea that the best mexican is in southern CA and you have to go to SF for the best asian but that's not true at all and just shit talking from the rival cities. Lived in both, no difference.
I would agree that italian seafood type stuff like cioppino is more so in "golden coast" (literally just SF).

The more definitive stuff is how Hawaiian, Japanese, American, (and a fuck ton of others) post-war pallets all mixed over time. Gas station spam musubi, manapuas, malasadas, oxtail soup made in vietnamese pho broth, and most importantly - plate lunches REQUIRING (in caps) both white rice and macaroni salad.
