They're largely just hocking random shit to tourists. I'm not saying the Algarve isn't ultra touristy, but the quality of their seafood is on a different level. Try any of the few varieties of cataplana. The sardines are excellent. Even though it's not an actual meal, you just get complimentary couvert shoved at you, which is a pleasure to snack on in comparison to usual bar / pub snacks. It's everywhere and they all have their small variances. Pestiscos de taverna, again they all have their own signature little dishes, the mainstay being chourico de bombeira is fucking out of this world - such a simple thing - a chorizo in a red clay dish with alcohol poured over so it flambees at the table, but their sausages are excellent. You get some good suckling pig from inland. Places like Albufeira, Vilamoura and even Lagos had some excellent restaurants for dinner. Lunch was a bit shit at times, very basic cafe stuff (apart from if you want a fuckton of seafood in the form of cataplana in the daytime). But at night, so much better. You don't realise (or at least I didn't) how many millionaire mansions there are dotted just slightly inland, with swanky golf courses or whatever else. So the standard of food is largely a bit higher.
