my recipe for pizza dough (2 doughs):
>330g Type 00 flour
>215g lukewarm water
>1.7g fresh yeast
>11g salt
1. desolve yeast in water and add flour
(only add about 90% of the water, in case the dough feels wet enough already because of ambient moisture. you can still add the last 10% later if needed)
2. mix for a few minutes
3. add salt (yeast hates salt, so we add it later)
4. mix until you can stretch the entire dough properly without it ripping apart
5. rest for 30min at room temp
6. split the dough in half. form balls. rest for 6-8h at room temp
6. form the pizza dough by going from the inside to the outside, so the middle is nice and thin and the crust is thick
