That's not entirely accurate, in any case it's not about the ageing, it's about overall quality and taste. kerrygold is not a good example as it is produced mainly for the American market (that's why it has Ireland/Irish printed at least 4-5 times on the packaging).
As a disclaimer: Nothing wrong with Kerrygold, it's sold in the UK but it's Meh! . . .same as any other mass produced supermarket cheddar. But there are a lot better. One of the most popular brands of supermarket cheddar is Cathedral City, again it's pretty hum drum but Ok and sells a lot more than kerrygold.
