Sorry but that's a maths failure right there.
100 g of raw, peeled potato has 0.4mg of iron. 100 g of raw potato peel has 3.24mg. That means 100g of skinless taters have only 12% of the iron as 100g of raw skin IE to someone who doesn't understand maths, they'd think that means the skin has 88% of the iron. But, again, skin only accounts for 2% of the weight of a potato meaning a 100g unpeeled potato would have 2g of skin on it, not 100g. 2% of 3.24mg is 0.0648mg, an utterly insignificant amount of iron.
tl;dr the nutritional benefits of leaving potato unpeeled is hugely exaggerated and overstated. There is no benefit to leaving the skin in other than simply enjoying the skin.
While we're at it, the difference in nutritional value between brown and white rice is also enormously overstated and, again, if you're diet is so shitty that having one serving of brown rice over one serving of white makes an enormous difference to your nutritional intake for the day, your need to really really really readjust your diet.
