so, different cultures, demographics and economies influence what's available. you can't expect to find the same restaurant scene that you would in California or New York in Tennessee or Oklahoma. they're called the flyover states for a reason. like others have repeatedly pointed out to you, the restaurant scene there is mostly centered in the urban areas because that's where the demographics are for it. rural Tennessee has historically mostly been agricultural, and tourism has seen most of its growth in the last decade (outside of the Smoky Mountains, which are mostly a hiking and camping destination so don't really the demand for fine dining) so it will take time for things to catch up to demand.
you're shooting down every suggestion and don't seem willing to accept that your expectations might just be out of line for what is available. if you've done research online and still haven't come up with anything that meets your standards, then you might just be out of luck. I don't know what you wanna hear.
