It will guess level by the voltage. Overcharge... I have doubts it would charge cells without temp sensor or talkative BMS (i.e. sony cameras).

You can use batteries with built in protection and charge them with liitokala or other charger designed to charge individual cells. It is probably the best variant for you, because if you knew about BMSes, etc. You'd not have asked question this broad. But... I will tell you anyway, you can get protection boards (BMSes) from aliexpress for whatever voltage (i.e. amount of cells in series) you need. 7.4V is 2S BMS. It connects between camera and batteries.
BMS will protect cells from overcharging, and overdischarge.
You can skip the protection board, but if camera fails (or your wiring fails), wire would become a fuse. And there would be no overdischarge protection, which is something batteries don't like.

But... What stops you from buying a proper battery pack or two from aliexpress? It has all features you want from the battery pack.
