TL;DR: Jesus doesn’t like it when you look at furry porn or fuck 100 partners in a lifetime, and you’re expected to find someway to explain evolution and the Book of Genesis (which is actually a far bigger deal than expected seeing as the crucifixion is presented as a remedy to Adam and Eve’s sin, hard to justify dying for an allegory). More and more people don’t want to deal with those contradictions or compromises with secular society, so they just reject Christ and go for the easier option.
As for why people don’t mock Islam, a combination of Islam’s far more willing use of violence against detractors and a still relative ignorance of Muslim beliefs and practices in the west. In the hayday of the “war on terror” it was more common, but now the big bad boogeyman in the media is white supremacists, Muslim jokes have fallen out of favor and relevance
