Universally? No. Addition of books to the New Testament was relegated to the home regions of those books and only for a short time. The Shepherd was never accepted outside of the northwestern Mediterranean.

Which one? Trent? Historically, this is simple mythology, it did not happen aside from the glaring theological issue. If a book is inspired by God, it is so at its writing by definition, for by "inspired" we mean God used the author to deliver His very words to His people. Therefore, those books which are inspired were inspired from the very moment of its writing, and constitutes canon scripture by sole virtue of its inspiration. And any man or group of men which drafts a list of canon which is distinct from the list of books which were inspired by God is merely in error. Nor does the authority of God's word in any way depend on the authority of men (which is sacrilegious unbelief), but it is to be received and believed because it is the word of God.

Monasticism arose from eastern monasticism which is why it began in the east and shared the same values. There are literally monastic tales like Barlaam and Josaphat which were lifted directly from Buddhism.
