I'm not an expert in architecture but am a bit savvy in history.
Basically, those times were times when aristocrats and nobles had more influence on society and culture, and peasants lived in wood shacks. Peasants, though, still sought to emulate the nobles when they could.
Our modern world is 'ruled' by peasants, so we have the stylings of the peasantry.
Below is about literature, but I think it can be applied to the stylistic sense of society in general:
