"air guns" is a pretty broad category. A child's BB gun is not going to kill anybody, or stop anybody either. A higher end PCP style air gun like people use for hunting can absolutely kill someone.

this. "bird shot" is very vague. Something like a dove & quail load is among the weaker shotgun loads for a given gauge. The larger birdshot sizes might as well be buckshot, and velocity of a magnum hunting load is often a lot higher than a defensive buckshot load.
