Is your High School math good? If not then start with the basics, read some standard High School text and Titu Andreescu's Olympiad books. Then you can dive into calculus with Apostol's and proofs with Velleman's. All that was just so you can reach the starting line, now is where you learn real math:

Read Tao or some other book first, then read Rudin.
>Linear Algebra
You can read some easier book first but if you're feeling prepared then go straight to Hoffman and Kunze.
>Abstract Algebra
A Friendly Introduction to Abstract Algebra is, as the title suggests, a very gentle introduction, but if you're feeling prepared you can read Artin.
>ODEs/PDEs
I'm no expert on those, I read the professors' books at the time, but people recommend Tenenbaum and Evans.
>Complex Analysis
Zill is a very gentle introduction, Priestly is a middle ground and Ahlfors is for those who are very confident.
>Differential Geometry
Do Carmo is the standard text for Classic Differential Geometry, but I like Abate's Curves and Surfaces more.
>Physics
University Physics by Young and Freedman followed by the Feynman Lectures, a mathematician who doesn't know the basics of physics is worthless.

After that you're ready to tackle PhD-level maths, by then you'll already have a clear goal in mind in which field you like the most and wanna specialize in.
