This is a bit hard to answer because germany varies wildly and so do the fishing spots. In some areas, particularly more rural ones around mecklenburg, you're looking at a lot of lakes with a lot of fish. As long as you don't compare it to those youtube videos where someone catches 2 giant fish per minute in australia or alaska, it's fine. Towards the south there's a few less fish in the rivers due to overfishing, but you can still catch enough.
As for more interesting/fun fish, the usual are pike, riverbass, pikeperch, catfish are the usual (ignoring coastal regions), if you don't want or need a fight, carp are also common as well as a shitton of whitefish.
One issue german waters have is that if it is somehow connected to a river that has commercial cargo ships in it, it WILL be infested with gobys (usually blackmouth, but others also appear). They come here in the ballast water tanks of those ships and ruin the ecosystem.
Upside: You can always catch some if you need some food for a dog or yourself if you don't mind the fact that they are bite sized snack. I've had some shit days where I caught nothing and then just caught enough gobys for a meal within the last 10 minutes after deciding to change my tackle to not avoid them.
Downside: These fuckers are everywhere and eat everything, so if you do any fishing close to the ground, you will catch a shitton of them on the side.

I've not been asked to show my loicence even once in those 10 years, so rarely, but that almost certainly depends on where you are.

I'd still not do it. If you get caught it's considered poaching and has serious punishments attached. Once you have done your test it's really just a question of paying daddy government 50€ a year, which for a hobby isn't that bad.
