Expanding on this concept, two additional details about them:

1) Alchemists trying to make better telescopes accidentally created one with the properties necessary to actually view the other dimension beyond the star. Which, as you can imagine, confuses the fuck out of your scholars when they point it at what should be a normal star and instead see a towering glowing tree in a place where the sky is made of diamond or some other baffling shit.

2) The 'worlds' of the gateway stars are enduring snapshots created from the mind of the specific mortal that made contact with the cosmos. Essentially, there is a higher dimension out there but your mind can't really comprehend it directly. It can only really grasp the shape of it through metaphor. And what those metaphors ARE is going to be unique based on the mind of the person who is making the contact, because its whatever makes sense to THEM based on how they think and their culture and perhaps their personal religious assumptions about how the world works. Different people making contact with the same other world will generate very different gateway stars, sometimes meaning that the same eldritch creature exists in both gateways but looks completely different. The Eternal King's star and the Star of Saint Damona both lead to the same place, but one is based on the ancient Phyraidian Underworld and the trickster spider god that lives there, and the other is seen as a beach where the mortal world meets a vast and dangerous ocean whose shores are guarded by a living bramble commanded by some unseen will. Same place, seen through different eyes by peoples born millennia apart. And both interpretations exist as 'real' places separate from each other.
