Streaming shows are two hour screenplays stretched into 6-8 episodes. Each individual episode is wholly unsatisfying because of this, they aren't individually constructed with keeping audience participation but written to be viewed as a whole. Streaming services suffer massively from choice paralysis (too many options) whilst simultaneously having no choice (it all feels the same). Normal people just don't like the time, effort and money that goes into signing up for a service and following along with this stuff. Remember, it isn't:

It is:

So why bother? I have to put energy and concentration in and pay for it!

What drove the viewing of the MCU was the gimmick of team ups and the little things like after credits, cameos etc. Fear of missing out is an anxiety that by not consuming you won't be in the know and will subsequently miss out. Most franchises have tried to build this feeling and Star Wars was steadily Marvelised. TLJ undercut serious moments with jokes and quips. A Star Wars story was meant to come out every other year until TLJ/Solo situation. Bob Iger declared the issue "Star Wars fatigue" but the truth was TLJ was bad and no one saw Solo because of it (it was fine at best).

Disney+ shows were Marvel Star Wars 2.0. The Mandalorian was made by Jon Favreau (who directed Iron Man films) and slowly built up but was intended to be a show with spin offs. All the old cancelled Star Wars story movies were made into shows (Obi Wan, Boba Fett). The idea is "there is something for everyone". But here is the thing: 1-2 movies is a low amount of buy in. And people don't want to pick and choose context, they want it all in a franchise, because you forced FOMO onto them. So what happens when FOMO gets too much? The only way to relieve the anxiety is to let the thing pass you by.
