It was a really missed opportunity that the Arkham Knight's final boss battle was relegated to yet another Predator level instead of an one-on-one combat like Deathstroke's boss battle in Arkham Origins.

Same, I usually go back to the AR challenges to achieve some of the last trophies I always struggled with, especially Requiem for a Killer. What I love the most about the combat is the multiple ways you can take down an enemy with all the gadgets you have at your disposal, and the fact that the game discourages to mindlessly mash the square button in order to achieve critical strikes.
