not a big problem, the delay isnt significant enough to meaningfully change how you approach combat. what else would you suggest, lowering the delay to .1 a second and mashing your mouse to kill things before they have an opportunity to swing at you?

another skill issue, though this is less of a problem with 1.20 adding more knockback to attacks. hitting and backing up is hardly difficult.

shields are great, especially against a certain new mob. they literally directly fix your c) complaint, if you keep messing up dodging somehow just tank their attacks with a shield. use X to switch your lantern with your shield quickly if light is an issue

true only in some cases. not all of us have easy access to treasure hunting jews connected to a convenient road network. getting temp gears from mobs is usually more convenient, especially since you'd be fighting them anyways
