tl;dr version - only bother with DC, PS1 and PS2 versions:

Pretty much the base version of the game. MIDI OST.
>PC
Same as N64 version but better quality of OST, graphics and framerate.
>DC
Same as PC version but with some improvements in graphics, addition of Globox Village (minigames) and replacement of Hall of Doors with Isle of Doors (aka level selection just lookds a bit different). Overall, Ancel himself considers it to be the best version of Rayman 2.
>PS1
A PC version that was scaled down and downgraded to fit on platform that resulted to removal of some levels (Sanctuary of Water and Ice is a loss, but thank fuck Top of the World was removed) and level sections. Features actual voice acting and one 2D level of Rayman 2 prototype.
>PS2
Basically an opposite of PS1 version - it's a PC version but with even more improved graphics and a bunch of new features added: proper hub-world levels instead of Hall of Doors, upgrade system by trading in yellow lums, expanded levels, new boss fights and mook fights. Some new stuff feels a bit low-quality (like Grolem 13 fight) and on native hardware game suffered from framedrops (dunno about emulator).

A port of DC version without Globox Village
>3DS
