Because "old good, new bad" when it comes to quality of videogame itself (don't ask me) but also "old is too hard / ughh too problematic / had outdated graphics, make it easier / censor it / add modern graphics" (again, don't ask me why people think like that).
Corpos know about this, so instead of risking with making a completely new title (especially if it's AAA budget title) they slap together a remaster or remake (quality varies based on budget and dev team), slap $40~70 price tag on it and make free money off idiots.

Again, it's kinda like modern gamers like to claim that modern games are better than old ones, but at the same time they keep hearing about all those awesome old games off social media (TikTok, Youtube, X, Discord, etc.) and they don't wanna 180 their opinion about old vs bad, so they keep begging for remakes and remaster so that they can get the game AND still claim that new games are better than old ones.
In reality, the only games that require remakes are the ones that had some serious flaws in the original version. Something like Odin Sphere comes to mind - awful framerate when too much stuff is hapening on the screen (Odette's spider form even freezing the PS2 in some cases), pretty wonky combat system, too much menuing when it comes to alchemy system, not enough differences between FIVE playthroughs to justify them, and so on. Skip many years to Leifthrasir remake that pretty much fixed most of issues original version had AND still included original version of the game in remake in case someone really wanted to experience the jank of PS2 Odin Sphere.
Sadly, too many devs these days remake games not for the sake of actual improvement, but for the sake of trivial changes (often for the worse) and slapping modern price tag on the game to make free money.
