By creator do you mean one that seems to just "spawn" things or one that is more actively involved? There is a difference between those two concepts.

Chaos would be the default condition, it's not really something that can be thought up. Order, while also being primordial is a conscious differentiation of that chaos.

The poetic thing is used to describe complex subjects that are sort of perceived but difficult to properly explain. You need to read between the lines to arrive at the proper conclusion. For instance, apollo is associated with the sun but that doesn't necessarily mean that he is manipulating it (although that wasn't an unreasonable assumption in ancient times). The sun became associated with qualities like enlightenment and clarity which lead to people to associate it with the diety that they had in mind.

The titles do come and go but I'm referring to the actual deities who were given these titles. They are transcendent. To what degree, I'm not sure but they're still beyond man made constructs.
