That is the whole point of why meditation could help someone. It's the reason it helps people with anger issues, compulsive thoughts and even short attention span. Some seemingly "involuntary" reactions are dissected and made into voluntary ones that don't disturb the calmness of your mind.

Knowing something won't hurt you is not how you get yourself to not flinch.

Not flinching comes from having the right kind of awareness and concentration that you don't get affected by stimuli you don't want to get affected by. It's so powerful that you don't even have to know that it won't hurt you, did Kobe know he wasn't going to get hit in the face?Meditation works whether something is dangerous to your or not. You can meditate on the pain you're feeling from getting stabbed in the stomach just as well as the anxiety you get from a test tomorrow. For schizos it's more dangerous than for many other conditions, but ultimately it has a the same utility.
